Powdered Sugar: Generally, powdered sugar is used. However, according to your taste, you can replace it with brown sugar or jaggery.

Gather All The Nutty Stuff

First, blend ½ cup cashews into the powder using a mixer jar or other suitable accessory.

Take ½ cup of blanched almonds and remove their skin. Remove all the moisture and dry them by dabbing them using a muslin cloth. Then, spread them over that muslin cloth to get further air-dried.

Blend the almonds, similar to cashews, into a powder form.
Mix It All

Add ¾ cup powdered sugar, ½ tsp saffron strands, cashews, and almonds to the jar. Blend further to get a homogeneous and fairly smooth powder.

Take a non-stick pan and add 3 tsp unsalted butter and 2 tsp water. Mix it well till the butter melts.
Make The Dough Of Kaju Puri

Add the mixture to a pan & cook for 5 minutes on medium heat. Continue cooking until the mixture sticks together, stirring continuously.

Add 1 tsp of unsalted butter to the pan and mix it. Transfer the batter to a greased plate and spread it, smoothing the surface. Let it cool for 10 minutes, so it is easy to handle now. The batter should be crumbly in texture.

Add 1 tbsp milk & knead the dough to smoothen the batter. Divide the Kaju Puri dough into two equal portions.
Let’s Make The Circles

Flatten a portion of a dough and place it over a greased rolling board (chakla). Cut the dough into small circles using a cookie cutter. Collect the remaining scraps and flatten the dough to get a few more Puris.

Put the Cashew Puris on a baking tray & bake it for 5 minutes in a preheated oven at 200 degree celsius.

Take the tray out. Let the puris cool down. Then, turn them around. This step is crucial to prevent the kaju puri from cracking.

Again, bake the cashew nut puri for 5 minutes in an oven under the same conditions.
